Cafina C5 Espresso Machine
Technical Features
- Self-Adjusting Grinders
The Cafina is the only super automatic espresso machine with
this patented feature. The Cafina’s “Electronic Barista”
automatically times the extraction and uses a small motor to
adjust the grinder. Changes in barometric pressure, relative
humidity, and ambient temperature, and age of beans will not
affect the shot quality.
- Measures the grounds dose of
every shot – Adjusts dose as needed
Computer controlled grinders keep the ground coffee dose
consistent over the life of the burrs. The C5 espresso machine measures the
actual dose delivered each cycle and the grinding time is
adjusted up or down as little as 1/50th of a second to maintain
a consistent dose.
- Variable Tamp Pressure
The only super automatic espresso machine that allows
variable adjustment of tamp pressure for different drinks. The Cafina
espresso machines treats your coffee just like a live barista. Single,
double, or triple shots can be tamped differently to need, to
achieve the best results.
- Tamping Pressure system is
self-calibrated after every shot
A self-correction program also monitors the tamp pressure and
adjusts for coffee machine wear. This ensures a consistent tamping
pressure over the life of the rebuildable piston.
- Taller puck produces a better
extraction
The internal brew chamber is only 45mm in diameter. This
produces a taller puck that allows the extraction water to be in
contact with the coffee longer
- Micro filter Technology

Conically shaped holes resist clogging, while allowing fine
solids and emulsions to pass through. The filter has over 45,000
laser-drilled holes, while other espresso machines average no more than
120.
- Pre-infusion
Different pre-infusion amounts can be programmed for each
individual shot size and coffee type. Another Cafina espresso
machine exclusive.
- Brew chamber is sealed with a
water valve controlled sealing ring
The ring inflates with water to create a positive seal between
the tamp and the brewing chamber. It retracts when the tamp is
moving in or out of the chamber.
Other espresso coffee machines use friction rings that wear out and must be
replaced frequently. Coffee leaks from around the edges of the
tamp when a friction ring fails, preventing full brewing
pressure from being applied to the grounds. (and making a mess)
- Stainless Steel Brew chamber
The Brew chamber is formed from a stainless steel cylinder that
is machined to a smooth finish to prevent coffee residue
build-up.
- Precision piston control
A computer controlled industrial stepper motor drives the
piston. There are 2600 pulses, or clicks of the stepper motor,
for each inch the piston moves up or down. This allows precise
piston positioning. For every piston position, Grind, Brew,
Eject, etc., the computer delivers the exact number of pulses
need to move the piston to the required position.
- PID Electronically pulsed brew
boiler control
Cutting edge Proportional Integral Derivative computer applies
full power to the heating element for fast heating, then pulses
the power as the temp approaches the desired point. This greatly
improves the stability of the brew temperature. The computer
brain actually learns how the boiler reacts and adjusts for the
best heating cycle. This assures consistent brewing
temperatures, whether doing a single shot or ten espressos in a
row.
The heating element rods are evenly spaced inside the brew
boiler, not bunched together at one end or one side. This
improves the stability of the brew water temperature; heat is
applied evenly to all parts of the boiler water.

This helps them maintain stable temperatures. The boilers can
also be quickly removed for evaluation or replacement.
- Spouts adjusts for cup height
Dispensing spout ratchets up and down and clicks into the
desired position so it won’t slip down.
- Solid construction
- One-piece molded body holds the piston and grinders.
- Solid stainless steel legs are attached to a thick welded
stainless steel bottom frame.
- Side panels fit tightly, but can be easily removed for
service.
- Hopper is made of a tough non-brittle plastic that resists
crackling; its smooth surface is easy to clean.
- Anti-siphon steam wand
Special 2-way Steam Valve automatically releases the vacuum that
forms when the steam wand is shut off. Milk can’t be sucked into
the wand even if the wand is left in the pitcher when the steam
is shut off.
- Magnetic drive espresso pump
Spinning magnets on the motor turn the pumphead without any
moving parts touching each other.
- Quieter operation

- Hot Milk and Foamed Milk
Both are created and dispensed separately into the same drink
from a single, computer controlled foamer head. Milk foaming and
flow are precisely programmed and dosed without the operator
needing to make any adjustments. The foam texture and
temperature are equal to what a skilled barista can produce.
Cafina hold the US patent on this foaming technology.
- Precise Milk delivery
Milk is delivered by a separate milk pump, not drawn by an
inexact Venturi System as with most other machines. The pump is
computer controlled to precisely meter the exact desired
quantity of milk for every drink. Each drink can be individually
programmed with the perfect mix of hot milk and foam. Every
drink is exactly like the one before providing a level of
consistency never before possible.
- Milk Path Sanitizing
The Foamer head is purged with low-pressure steam immediately
before and after each milk dispensing cycle. The head is also
rinsed with cool water after each use. No milk sits in the head
between uses. The Cafina’s milk system is certified by both U.S.
and European sanitary agencies.
- Clean in Place (CIP)
No more disassembly for cleaning at days end. Both the milk and
coffee paths are cleaned in place. The Cafina's automatic
cleaning feature allows the operator to simply insert a cleaning
tablet and push a button while the espresso machine does the rest.
